- ½ lb. ground turkey 93/7
- ½ lb. ground sausage mild
- 2 Tbsp. olive oil
- 1 sweet onion small, finely diced
- 1 green bell pepper finely diced
- 2 stalks celery finely diced
- 2 tsp. blackened seasoning or Cajun seasoning
- 16 oz. cauliflower rice
- ¾ tsp. salt to taste
- ¼ tsp. red pepper flakes optional
- Fresh parsley optional

Sauté ground turkey and sausage in a large skillet over medium heat for 6-7 minutes, or until cooked through. Crumble meat using a potato masher or fork. Remove ground meat from the skillet and drain on a paper towel-lined plate.

Add 1 tablespoon olive oil to the skillet with onion, bell pepper, and celery. Sauté over medium heat for 5-6 minutes, or until vegetables are tender. Add crushed garlic and continue sautéing for 1 minute.

Reduce heat to medium-low and add remaining oil, riced cauliflower, seasoning, salt, red pepper flakes, and meat. Stir until well incorporated, cover skillet, and cook for 7-8 minutes, or until rice is tender.

Serve cauliflower dirty rice with chopped parsley and additional red pepper flakes. Enjoy!
