Ingredients
1 1/4 lb. Green beans, trimmed
1 1/4 lb. Cherry tomatoes, quartered
1 tsp. Fresh oregano chopped, or some dried
1 T. Shallot, minced
2 T. Red wine vinegar, balsamic vinegar works too!
2 1/2 tsp. Olive oil
1/2 tsp. Salt
1/4 tsp. Freshly ground pepper
Instructions
Cook beans in boiling water 7 min. or until tender. Drain, place beans, tomatoes and oregano in a large bowl, toss gently.
Mix shallots and vinegar and allow to stand 10 min. Add oil, salt and pepper to vinegar mixture, stirring with a whisk until well blended. Pour vinaigrette over bean mixture, toss well. Enjoy slightly warm, room temp or cool.
