Makes 4 servings
5 cups broccoli florets
3 tsp. grated lemon rind, divided
1 Tbsp. fresh lemon juice
½ tsp. salt, divided
½ tsp. pepper, divided
1 ½ lb. peeled de-veined large shrimp
3 Tbsp. olive oil
¼ tsp. crushed red pepper
Preheat oven to 425 degrees.
Fill a medium pot 2/3 full of water and boil at medium high heat. Add broccoli to water and cook for 1 minute. Drain and plunge into cold water; drain.
Combine 1 ½ tsp lemon rind, lemon juice, ¼ tsp salt and ¼ tsp pepper in a medium bowl. Add shrimp and toss to combine. Arrange broccoli and shrimp mixture in a single layer on a baking sheet coated with cooking spray or oil. Bake for 8 to 10 minutes or until shrimp is done. Remove from oven.
Combine olive oil, crushed red pepper, the remaining lemon rind, salt and pepper and toss with cooked broccoli and shrimp.
