Makes 6 servings

1 Tbsp. cooking oil
1/3 cup chopped yellow onion
2 cups cooked brown rice (preferably day old)
1 cup edamame, cooked and shelled
1 1/2 chopped mixed veggies 

3 large eggs, scrambled
3 Tbsp. low-sodium soy sauce
1/3 cup chopped green onions


In a medium pot, Bring salted water to a boil and add edamame pods.  Boil for about 5 minutes or until pods turn bright green.  Drain water and rinse with cold water to stop cooking.  Remove edamame from their pods and set aside.  

Heat oil in a large skillet over medium-high heat.  Add the chopped onion and vegetables and cook until the onion is fragrant and slightly translucent. Add the cooked brown rice and cook for about 1-2 minutes, then add the edamame.

Add the cooked scrambled eggs and soy sauce and mix together well. Finally, add the chopped green onions and fold them into the rice gently. Garnish with extra chopped scallions and soy sauce.
