Sift Together:

1/4 cup cocoa powder

1 1/4 cup gluten free flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon cream of tarter

Combine Ingredients:

3 lightly beaten eggs

2/3 cup olive oil

1 cup sugar

1/4 cup sour cream or plain yogurt

Directions:

Combine wet and dry ingredients. 

Then fold in 3/4 cups raw, grated beets.  The beets will be visible in the finished product.  

Bake at 350 degrees for 20-30 min.  

Jan uses two parts brown rice flour, one part tapioca flour and one part quinoa flour for her gluten free flour mix.
