2 lbs red beets

2 tbs olive oil dressing

2 tbs chopped fresh mint leaves

1 tsp dijon style mustard

2 tbs cider vinegar

1/2 cup olive oil

salt and pepper to season


Scrub beets really well and wrap in foil paper with a drizzle of olive oil

Place on baking sheet in a 400 degree oven for about 1.30 hours (more or less depending on size)

When done (test with a toothpick) let cool in the wrap then just rub off the peel.

Dressing:  In a bowl or food processor mix the mint leaves, mustard and cider vinegar, then slowly add the olive oil while mixing.

Adjust the seasonings with the salt and pepper.

To serve, slice the beets and toss with the dressing
