INGREDIENTS

            3 tablespoons ground flaxseed

            1 red onion, chopped

            4 ounces mushrooms, sliced

            1 clove garlic, minced

            1/2 cup chicken broth

            10 ounces baby spinach

            3 ounces cream cheese

            1/2 cup (2 ounces) shredded Cheddar cheese

            1 teaspoon dijon mustard

DIRECTIONS

Preheat the oven to 350°F. Coat a 1 1/2-quart baking dish with a little oil and sprinkle the flaxseed over the bottom of the dish.

Put 2 tbs butter into a large skillet and heat over medium heat. Add the onion and mushrooms and cook, stirring, for 5 minutes, or until tender and the mushrooms have released their juices. Add the garlic and cook, stirring, for 2 minutes, or until lightly browned.

Stir in the broth and spinach and cook for 4 minutes, stirring, or until the spinach wilts. Stir in the cheeses and mustard. Stir until just melted and well blended.

Pour into a prepared dish. Bake for 20 minutes, or until set. Let stand for 5 minutes before serving.
